Peel the mangoes and remove the flesh from the seed. Place the mango flesh in a blender and puree until smooth. You should have about 2 cups of mango puree.
In a small bowl, sprinkle the unflavored gelatin over the cold water. Let it sit for about 5 minutes to bloom.
In a saucepan, gently heat the bloomed gelatin over low heat until it dissolves completely. Do not let it boil. Remove from heat once dissolved.
In a large mixing bowl, combine the mango puree, Greek yogurt, and dissolved gelatin. Stir until well combined.
In a separate mixing bowl, whip the heavy cream to soft peaks using an electric mixer. Once soft peaks form, add the vanilla extract and continue to beat until firm peaks form.
