Rinse the urad dal thoroughly and soak it in water for about 2 hours.
Drain the water and grind the uard dal into a smooth batter, adding only a little water as necessary to achieve a thick consistency. The batter should be smooth and fluffy.
Add the orange food color to the batter and mix well. Transfer the batter to a cloth or piping bag with a nozzle.
For the sugar-free syrup, combine stevia, water, citric acid, and cardamom powder in a pan and bring it to a boil.
Simmer the mixture for about 5-7 minutes until it thickens slightly. Add rose water. Keep the syrup warm on low heat.
Heat ghee or refined oil in a flat-bottomed pan for deep frying. When hot, lower the flame to medium.
Pipe out the batter in circular or spiral shapes directly into the hot oil. Fry the Jangris on medium heat until they turn golden and crisp on both sides.
Remove the Jangris from the oil and allow the excess oil to drain. Immediately immerse them in the warm sugar-free syrup.
Allow the Jangris to soak in the syrup for about 1-2 minutes. Repeat the process with the remaining batter.
Serve the sugar-free Jangri either warm or at room temperature.
