In a large mixing bowl, combine the whole wheat flour, instant yeast, and salt.
In a small saucepan, melt the butter over low heat. Add the milk and heat until warm (not hot).
Whisk the egg and vanilla extract into the milk and butter mixture.
Pour the wet mixture into the dry ingredients and mix until a soft dough forms.
Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Once risen, punch down the dough and roll it out to about 1 cm thick on a floured surface.
Using a round cutter (about 7 cm in diameter), cut out 10 rounds of dough.
Place the rounds onto a baking sheet lined with parchment paper, cover with a towel, and let rise for another 30 minutes.
Heat the neutral oil in a deep pan to 180Β°C (350Β°F).
Carefully fry the doughnuts, 2-3 at a time, for about 2-3 minutes on each side until golden brown and cooked through.
Remove from oil and drain on paper towels.
Once cool enough to handle, poke a hole in the side of each doughnut and fill with sugar-free berry jam using a piping bag.
Roll each filled doughnut in powdered erythritol to coat.
Serve the doughnuts warm or at room temperature.
