Wash and hull the strawberries, then cut them into halves or quarters depending on their size.
Place the strawberries in a large saucepan over medium heat. Mash them using a potato masher or fork until you reach your desired consistency (smooth or chunky).
Add lemon juice to the saucepan and stir to combine with the strawberries.
In a small bowl, mix the powdered pectin with the granulated erythritol.
