Boil 500 milliliters of water in a medium-sized pot. Ensure the water reaches a rolling boil.
Once boiling, slowly add 240 grams of garri to the water while stirring continuously with a wooden spatula or spoon. This helps to avoid lumps forming.
As the garri absorbs the water, keep stirring to ensure even distribution and smooth texture. Reduce the heat to low if necessary.
Add a pinch of salt to the mixture, continue to stir for about 3-5 minutes until the eba becomes thick and smooth, and pulls away from the sides of the pot. The consistency should be moldable and not sticky.
Once the desired consistency is achieved, remove the pot from heat.
Transfer the eba onto a flat surface or a plate. Use your wooden spatula to knead it slightly, ensuring itβs well-mixed and smooth.
Shape the eba into your preferred serving size and form, traditionally a round or oval shape.
Serve your sugar-free eba warm with your favorite soup or stew.
