In a large bowl, combine the whole wheat flour and instant dry yeast.
In a small saucepan, melt 60 grams of the unsalted butter over low heat. Once melted, remove from heat and add salt, milk, and vanilla extract. Allow the mixture to cool until lukewarm.
Add the cooled butter mixture to the flour-yeast mixture along with erythritol sweetener and the egg. Knead the dough in the bowl until it comes together.
Transfer the dough to a floured surface and knead for about 8 to 10 minutes until smooth and elastic.
