Preheat your oven to 180°C (350°F) and line a 20cm x 20cm (8-inch square) baking tin with parchment paper.
In a large saucepan, melt the butter gently over low heat.
Once the butter is melted, remove the pan from the heat and stir in the honey, making sure they are well combined.
Add the rolled oats, dried mixed fruits, chopped nuts, ground cinnamon, vanilla extract, and salt to the saucepan. Mix everything until the dry ingredients are evenly coated with the butter and honey mixture.
Transfer the mixture into the prepared baking tin. Press down firmly with the back of a spoon or spatula to ensure it is tightly packed and levelled evenly.

Store the flapjacks in an airtight container at room temperature for up to a week.
