Cut the chicken breast into small pieces to fit your meat grinder or food processor.
Peel and roughly chop the onion, garlic, and ginger.
Add the chicken pieces, onion, garlic, ginger, fresh coriander, mint leaves, and green chilies into a meat grinder or food processor. Process until you get a finely ground mixture.
Transfer the mixture to a large mixing bowl.
