Cut the stale whole wheat bread into small cubes and place them in a large mixing bowl.
In a saucepan, heat the milk until warm. Pour the warm milk over the bread cubes and let them soak for about 10 minutes.
Meanwhile, peel and finely chop the onion. In a small skillet, melt the butter over medium heat and saute the onion until soft and translucent, about 5-7 minutes. Set aside to cool slightly.
In a separate bowl, beat the eggs and add salt, black pepper, and nutmeg. Mix well.
Finely chop the parsley and add it to the egg mixture along with the sautéed onion.
Pour the egg mixture over the soaked bread cubes, then add the whole wheat flour. Gently mix the ingredients with your hands or a spatula until well combined and the dough can hold its shape.
Bring a large pot of salted water to a boil.
Moisten your hands and form the bread mixture into dumplings, about the size of a medium apple.
Carefully place the dumplings into the boiling water. Reduce the heat to a gentle simmer and cook the dumplings for 15-20 minutes, making sure they do not stick to the bottom of the pot.
Once cooked, remove the dumplings with a slotted spoon and drain well.
Serve warm as a side dish to your favorite gravy-laden main course.
