Heat a heavy-bottomed pan over medium-low flame and add the ghee.
Once the ghee is melted, add the besan and start roasting it, stirring continuously to prevent burning.
Roast the besan for about 15-20 minutes until it becomes fragrant and turns golden brown. The besan should release a nutty aroma.
Add almond flour to the roasted besan and continue to stir for another 3-4 minutes.
Remove the pan from heat and let the mixture cool for 5 minutes.
Add powdered erythritol and cardamom powder, and mix until well combined.
Mix in the chopped nuts and raisins.
Once the mixture is cool enough to handle but still warm, take small portions and shape them into round balls, pressing firmly to bind.
Let the ladoos cool at room temperature for about 30 minutes, or refrigerate for quicker setting.
Store the sugar-free besan ladoos in an airtight container for up to two weeks.
