Indulge guilt-free with this delightful Sugar-Free Apfelstrudel, a light and wholesome twist on the classic Austrian dessert. Made without added sugars, this recipe brings out the natural sweetness of fresh apples paired with juicy raisins, aromatic cinnamon, and a touch of vanilla, all wrapped in a delicate homemade dough. The thin, stretchable crust delivers a satisfying crispiness, while finely chopped walnuts add a delightful crunch in every bite. Perfectly baked to golden perfection, this sugar-free apple strudel is ideal for those seeking a healthier treat without compromising on flavor. Serve it warm or at room temperature for a comforting dessert thatβs both nourishing and irresistible.
In a large bowl, mix the flour and salt. Make a well in the center and add the egg, lukewarm water, and melted butter. Stir until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Form into a ball, cover with cling film, and let it rest for 30 minutes.
Preheat your oven to 375Β°F (190Β°C).
In another bowl, combine the sliced apples, raisins, lemon juice, cinnamon, vanilla extract, and chopped walnuts.
Roll out the dough on a large, floured kitchen towel or parchment paper, stretching it carefully until it is very thin and transparent.
Brush the dough with half of the melted butter (30g).
Spread the apple mixture evenly over two-thirds of the dough, leaving a 1-inch border around the edges.
Using the towel or parchment paper to help, gently roll the dough from the side where the filling is, tucking in the edges as you go, to form a log shape.
Place the strudel seam-side down on a baking sheet lined with parchment paper.
Brush the top with the remaining melted butter.
Bake in the preheated oven for 35-40 minutes, or until golden and crisp.
Allow to cool slightly before slicing and serving.
