In a bowl, combine the lamb cubes with 2 tablespoons of soy sauce, curry powder, and cornstarch. Mix well and let it marinate for 15 minutes.
Cook the egg noodles according to the package instructions. Drain, rinse under cold water, and set aside.
Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated lamb and stir-fry for 4-5 minutes until browned and just cooked through. Remove the lamb from the wok and set aside.
Add the remaining 1 tablespoon of vegetable oil to the wok. Add the minced garlic and ginger, and stir-fry for 30 seconds until fragrant.
Toss in the sliced red bell pepper, julienned carrot, and white parts of the green onions. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
Return the cooked lamb to the wok, then add the cooked noodles. Stir to combine.
Pour in the oyster sauce, dark soy sauce, remaining 1 tablespoon of soy sauce, water, and chili flakes (if using). Stir-fry everything together for 2-3 minutes, ensuring the noodles and lamb are evenly coated in the sauce.
Garnish with the green parts of the green onions and chopped fresh cilantro. Serve hot.
