📝 Instructions

9 steps
1

Season both sides of the ribeye steaks with salt and black pepper. Let them rest at room temperature for 10 minutes.

2

While the steaks rest, slice the cremini mushrooms and mince the garlic cloves.

3

In a large skillet over medium-high heat, add 1 tablespoon of olive oil and sear the steaks for 3-4 minutes on each side for medium-rare, or until desired doneness is reached. Remove the steaks and let them rest on a plate under foil.

4

In the same skillet, add the remaining olive oil and butter. Let the butter melt, then add the minced garlic and sauté for about 30 seconds until fragrant.

5

Add the sliced cremini mushrooms to the skillet and sauté for 5-7 minutes, until they have released their moisture and begin to brown.

6

Stir in the fresh thyme and add the beef broth, scraping any browned bits from the bottom of the skillet.

7

Reduce the heat to low and stir in the heavy cream. Let the sauce simmer for another 3 minutes until slightly thickened.

8

Return the steaks to the skillet, spoon some of the mushroom sauce over them, and let them heat through for 1-2 minutes.

9

Transfer the steaks to serving plates, pour the mushroom sauce over the top, and serve immediately.
