Bring a large pot of salted water to a boil. Add the egg noodles and cook until al dente, according to package instructions. Drain and set aside.

While the noodles cook, pat the steak dry with paper towels. Slice it into thin strips across the grain, about 1/4-inch thick. Season the strips with salt and black pepper.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the steak strips in a single layer (work in batches if necessary to avoid overcrowding). Sear the steak for 1-2 minutes per side, or until nicely browned. Remove the steak from the skillet and set aside.
