Season the ribeye or sirloin steak with salt and black pepper on both sides. Let it sit at room temperature for 10 minutes.

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the steak for 3-4 minutes per side for medium-rare, or cook to your desired doneness. Remove from the skillet and let it rest for 5 minutes, then slice into thin strips against the grain.
