Preheat your oven to 400Β°F (200Β°C).
Cut the butternut squash in half lengthwise and remove the seeds. Place the squash halves cut-side up on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with a pinch of salt and pepper. Roast in the oven for 35β40 minutes, or until the squash is tender and easily pierced with a fork.
While the squash is roasting, heat the remaining 1 tablespoon of olive oil in a large pot over medium heat.
