📝 Instructions

8 steps
1

Fill a large pot with 16 cups of water and bring to a boil over high heat. Add a generous pinch of salt and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausage links and cook for 8-10 minutes, turning frequently, until browned and fully cooked. Remove the sausages from the skillet and slice them into 1/2-inch pieces. Set aside.

3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for 30 seconds until fragrant.

4

Toss in the asparagus and cook for 3-4 minutes, stirring occasionally, until it begins to soften. Add the cherry tomatoes and cook for another 2 minutes, until they start to burst slightly.

5

Stir in the frozen peas and cook for an additional minute until heated through.

6

Return the sausage slices to the skillet along with the drained pasta. Pour in the reserved pasta water, lemon juice, and lemon zest. Toss everything together and cook for 2 minutes, allowing the flavors to meld.

7

Remove the skillet from heat and stir in the grated Parmesan, fresh basil, salt, and black pepper.

8

Divide the Spring Sausage Toss among plates or bowls, garnish with extra Parmesan and basil if desired, and serve immediately.
