📝 Instructions

12 steps
1

Preheat your oven to 190°C (375°F) and line two baking trays with parchment paper.

2

Wash and drain the spinach thoroughly. Chop the spinach into smaller pieces and set aside.

3

Finely chop the onion, garlic, dill, and parsley.

4

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, cooking until translucent and fragrant, about 3-4 minutes.

5

Add the chopped spinach to the skillet and cook until wilted, about 5 minutes. Remove from heat and allow the mixture to cool slightly.

6

In a large mixing bowl, combine the cooked spinach, crumbled feta cheese, dill, parsley, one beaten egg, salt, and black pepper. Mix well to create the filling.

7

Unroll the puff pastry sheets on a floured surface. Cut each sheet into 4 equal squares (for a total of 8 squares).

8

Place a heaping tablespoon of the spinach filling in the center of each square.

9

Fold each square into a triangle, pressing the edges firmly to seal. You can use a fork to crimp the edges for extra security.

10

Transfer the pies onto the prepared baking trays. Brush the tops with the second beaten egg and sprinkle sesame seeds over them.

11

Bake in the preheated oven for 20-25 minutes, or until the pies are golden brown and puffed up.

12

Allow the spinach pies to cool slightly before serving. Enjoy warm or at room temperature!
