Preheat your oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Add fresh spinach to the skillet and cook for 2-3 minutes until wilted. Season with salt and black pepper. Remove from heat and let it cool slightly.
In a large mixing bowl, combine shredded chicken, sautéed spinach, cream cheese, and 1 cup of shredded Mexican blend cheese. Mix until well combined.
Spread a thin layer of green enchilada sauce on the bottom of a 9x13-inch baking dish.
