Preheat your oven to 180°C (350°F).
Wash the spinach thoroughly and blanch it in boiling water for 2 minutes. Drain and squeeze out as much water as possible, then chop finely.
Finely chop the onion and garlic.
In a skillet, heat the olive oil and butter over medium heat. Add the onion and garlic and sauté until the onion is translucent, about 5 minutes. Allow to cool slightly.
In a large mixing bowl, combine the chopped spinach, onion-garlic mixture, breadcrumbs, Parmesan cheese, eggs, salt, black pepper, and nutmeg. Mix well until all the ingredients are combined.
