Clean the mutton chops thoroughly and pat them dry with a paper towel.

In a large mixing bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, salt, lemon juice, and mustard oil to make the marinade.

Add the mutton chops to the marinade, ensuring they are evenly coated. Cover the bowl and let the chops marinate for at least 2 hours, or ideally overnight in the refrigerator.
