📝 Instructions

9 steps
1

1. Cut the lamb shoulder into bite-sized pieces and pat dry with paper towels.

2

2. In a mixing bowl, combine ground cumin, smoked paprika, ground coriander, red chili flakes, salt, and black pepper. Toss the lamb pieces in the spice mixture until evenly coated.

3

3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the spiced lamb pieces and sear them on all sides until browned, about 5-7 minutes. Remove the lamb from the skillet and set aside.

4

4. Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Add the minced garlic and sauté for 1-2 minutes until fragrant, making sure not to burn it.

5

5. Return the lamb to the skillet, add 100 milliliters of stock, and reduce the heat to low. Cover and let the lamb simmer for 10-15 minutes, stirring occasionally, until tender and cooked through.

6

6. While the lamb is simmering, bring the remaining 200 milliliters of stock to a boil in a medium saucepan. Remove from heat, add the couscous, butter, and a pinch of salt. Stir well, cover, and let it sit for 5 minutes.

7

7. Fluff the couscous with a fork, then mix in the chopped parsley, lemon zest, and a drizzle of olive oil. Adjust seasoning with salt and pepper, if needed.

8

8. To serve, place a generous scoop of garlic couscous on each plate and top with the spicy lamb. Garnish with additional fresh parsley and serve with lemon wedges on the side.

9

9. Enjoy your Spicy Lamb with Garlic Couscous!
