📝 Instructions

12 steps
1

Heat the olive oil in a large pot or Dutch oven over medium heat.

2

Slice the andouille sausage into 1/4-inch rounds. Add the sausage to the pot and sauté for 4-5 minutes until browned. Remove the sausage and set aside.

3

Add the diced onion, bell pepper, and celery to the pot. Sauté for 5-7 minutes until softened.

4

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

5

Sprinkle the flour over the vegetables and stir continuously for 2-3 minutes to create a roux.

6

Slowly pour in the chicken broth while stirring to prevent lumps from forming.

7

Add the diced tomatoes, kidney beans, black beans, smoked paprika, cayenne pepper, dried thyme, and bay leaves to the pot. Stir to combine.

8

Return the browned sausage to the pot and bring the gumbo to a simmer. Reduce the heat to low, cover, and let it cook for 25 minutes, stirring occasionally.

9

Stir in the hot sauce and adjust seasoning with salt and pepper to taste.

10

Remove the bay leaves before serving.

11

Garnish the gumbo with chopped green onions and parsley.

12

Serve hot over cooked white rice. Enjoy!
