Bring a large pot of salted water to a boil.
Wash the tomatoes and score an 'X' at the bottom of each tomato with a paring knife.
Blanch the tomatoes in the boiling water for 1-2 minutes, then transfer them to an ice bath. Peel off the skins and chop the tomatoes into small pieces.
Peel and finely slice the garlic cloves.
