Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
Add the minced garlic and ginger and cook for another minute until fragrant.
Stir in the curry powder, cumin, coriander, and turmeric, and cook for 1 minute to release their flavors.
Add the diced chicken breast to the pan and cook until lightly browned all over.
