Preheat the oven to 375Β°F (190Β°C).
Wash and dry the spinach, then roughly chop it and set aside.
In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and chopped onion. SautΓ© for 5 minutes until the onions become translucent.
Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and set aside.
In a medium saucepan, mix the cornstarch with some of the whole milk to form a slurry. Then add the remaining milk to the saucepan.
