In a large ovenproof skillet or dutch oven, heat olive oil over medium-high heat. Add the chicken thighs skin side down and cook for about 5-7 minutes or until the skin is crispy and golden brown. Flip the chicken and cook for another 3 minutes. Remove the chicken from the skillet and set aside.
Reduce the heat to medium and add unsalted butter to the same skillet. Once melted, add the sliced onions and cook for about 5 minutes, stirring occasionally, until they are soft and translucent.
Add the sliced mushrooms to the onions and continue to cook until the mushrooms are browned and tender, about 5 minutes.
Sprinkle the flour over the onion and mushroom mixture. Stir well to coat and cook for another 2 minutes.
