Peel the potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much excess liquid as possible.
Grate the onion and combine it with the grated potatoes in a large mixing bowl.
Add the eggs, flour, salt, and black pepper to the potato-onion mixture. Mix well until fully combined.
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, drop 2–3 tablespoons of the potato mixture into the skillet and flatten into a pancake shape with a spatula.
