📝 Instructions

11 steps
1

Peel and roughly chop the garlic cloves. Set aside.

2

In a small bowl, mix garlic, olive oil, orange juice, lime juice, white vinegar, oregano, cumin, paprika, salt, and black pepper to form a marinade.

3

Pat the pork shoulder dry with paper towels. Using a sharp knife, make small slits all over the pork.

4

Rub the marinade generously over the entire pork shoulder, making sure to get the marinade into the slits for maximum flavor. Place the pork shoulder in a large bowl or freezer bag, cover, and refrigerate overnight (or for a minimum of 4 hours).

5

Slice the onion into thick rings and place them in the bottom of a slow cooker to create a flavorful base.

6

Remove the pork from the refrigerator and place it on top of the onion slices in the slow cooker. Pour any remaining marinade over the pork.

7

Add the bay leaves to the slow cooker and cover with the lid.

8

Cook on LOW for 8-10 hours or on HIGH for 5-6 hours, until the pork is fork-tender and shreds easily.

9

Once cooked, remove the pork from the slow cooker and place it on a cutting board. Use two forks to shred the meat, discarding any excess fat.

10

If desired, transfer the shredded pork to a baking sheet and broil in the oven for 5-8 minutes to achieve crispy edges.

11

Serve the pernil pork with the onions from the slow cooker and garnish with fresh cilantro. Enjoy with rice, beans, or in tacos!
