📝 Instructions

11 steps
1

Thinly slice the beef sirloin against the grain into bite-sized strips.

2

In a bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of cornstarch, and 2 tablespoons of water to create a marinade. Add the beef strips and let them marinate for 15 minutes.

3

While the beef marinates, wash and trim the scallions. Cut them into 2-inch-long pieces.

4

Mince the garlic cloves finely and set aside.

5

In a small bowl, mix 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of dark soy sauce, 1 teaspoon of sugar, and 1 teaspoon of sesame oil to create the stir-fry sauce.

6

Heat a large wok or skillet over high heat. Add 2 tablespoons of vegetable oil and swirl to coat.

7

Once the oil is shimmering, add the marinated beef in a single layer. Stir-fry for 2–3 minutes until browned but not fully cooked through. Remove the beef from the wok and set aside.

8

Add the remaining 1 tablespoon of vegetable oil to the wok, then add the minced garlic. Stir-fry for 30 seconds until aromatic.

9

Add the scallions to the wok and stir-fry for 1 minute until slightly softened.

10

Return the beef to the wok and pour in the prepared stir-fry sauce. Toss everything together and let cook for 1–2 minutes until the beef is fully cooked and coated with the sauce.

11

Sprinkle with black pepper and give it a final toss. Serve immediately with steamed rice or noodles.
