Crispy, golden, and irresistibly cheesy, Sigara Böreği (Little Cheese Rolls) are a beloved Turkish snack perfect for any occasion. These delicate bites feature flaky phyllo pastry filled with a creamy blend of tangy feta and mild ricotta cheeses, enhanced with the freshness of chopped parsley. The rolls are skillfully folded into cigar-like shapes and fried to perfection, creating a satisfying crunch with each bite. With just 20 minutes of prep time and straightforward techniques, this appetizer makes for an ideal party pleaser or a quick indulgence. Serve these savory delights warm, accompanied by yogurt or your favorite dipping sauce, for a truly authentic treat bursting with Mediterranean flavor.
In a medium bowl, crumble the feta cheese. Add the ricotta cheese and mix until smooth and creamy.
Stir in the chopped parsley and mix again until evenly combined. If you prefer, stir in the beaten egg to make the filling creamier (optional).
Take one phyllo pastry sheet and cut it into three long triangular strips. Cover the remaining phyllo sheets with a damp towel to prevent drying out.
Place one teaspoon of the cheese filling at the wide end of the phyllo triangle. Begin rolling tightly, folding in the edges as you go to form a cigar shape.
Once you reach the tip of the triangle, dampen it lightly with water to seal the roll. Repeat the process for the remaining phyllo strips and filling.
Heat the sunflower oil in a deep pan or skillet over medium heat until it reaches around 180°C (350°F).
Fry a few rolls at a time, turning them occasionally, until golden brown and crispy. This should take about 2–3 minutes per batch.
Using a slotted spoon, transfer the fried rolls to a plate lined with paper towels to remove excess oil.
Serve the Sigara Böreği warm as-is or with a side of yogurt or dipping sauce for extra flavor.
