Delight your taste buds with Sfiha Lebanese Pie, a beloved Middle Eastern pastry that pairs irresistibly soft dough with a flavorful meat filling. These triangular pies, often made with ground beef or lamb, are infused with aromatic spices like allspice and cinnamon, and elevated by the tangy sweetness of pomegranate molasses and a burst of fresh parsley. The dough, made from scratch, is tender yet sturdy enough to hold the rich filling. Perfectly golden from an egg wash finish, these savory pies are ideal for serving as an appetizer, snack, or accompaniment to a mezze spread. With a short baking time and a comforting blend of textures and spices, Sfiha Lebanese Pies are a perfect way to bring authentic Lebanese flavors to your kitchen!
In a large mixing bowl, combine the flour, yeast, sugar, and salt.
Make a well in the center and gradually add warm water and olive oil. Mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes, until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
While the dough rises, prepare the filling. In a skillet over medium heat, cook the ground beef or lamb until browned. Drain any excess fat.
Add the chopped onion and cook for 3-4 minutes until softened.
Stir in the diced tomatoes, pomegranate molasses, parsley, allspice, cinnamon, black pepper, and salt. Cook for another 5 minutes until well combined and slightly thickened.
Remove the filling from heat and stir in the lemon juice. Let it cool to room temperature.
Preheat the oven to 200°C (400°F) and line two baking sheets with parchment paper.
Once the dough has risen, punch it down and divide into 12 equal portions. Roll each portion into a ball, then flatten into a circle about 10-12 cm in diameter.
Place a tablespoon of filling in the center of each dough circle. Fold the edges up to form a triangle shape, pinching the sides tightly to seal.
Place the prepared pies on the baking sheets and brush the tops with beaten egg for a golden finish.
Bake for 15-20 minutes, or until the pies are golden brown and cooked through.
Serve warm or at room temperature. Enjoy your authentic Sfiha Lebanese Pies!
