📝 Instructions

9 steps
1

In a large bowl, combine the flour and salt. Cut the cold butter into small cubes and rub it into the flour mixture with your fingertips until it resembles coarse crumbs.

2

Gradually add the water, a little at a time, and mix until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

3

While the dough is chilling, prepare the filling. In a medium bowl, mix the feta cheese, ricotta cheese, egg, chopped parsley, and black pepper until well combined.

4

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

5

Remove the dough from the refrigerator and roll it out on a lightly floured surface to about 3mm thickness. Cut the dough into 12 rectangles, approximately 10x12cm each.

6

Spoon a tablespoon of the cheese filling onto one end of each rectangle. Fold the dough over the filling and roll tightly, sealing the edges with a little water if needed.

7

Place the rolls seam-side down on the prepared baking sheet. In a small bowl, whisk together the egg yolk and milk, then brush the tops of the rolls. Sprinkle with sesame seeds.

8

Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and flaky.

9

Remove from the oven and let cool slightly before serving. Enjoy warm or at room temperature.
