Preheat your oven to 160°C (320°F) and line a 20x20 cm (8x8 inch) baking tin with parchment paper, leaving a little overhang for easy removal.
In a large mixing bowl, combine the rolled oats, sunflower seeds, pumpkin seeds, chia seeds, sesame seeds, shredded coconut, and dried cranberries. Mix well to evenly distribute the dry ingredients.
In a small saucepan, combine the honey, peanut butter, and coconut oil. Place over low heat, stirring constantly until the mixture becomes smooth and fully combined.
Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt.
Pour the wet mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
Transfer the mixture into the prepared baking tin and press it firmly down into an even layer using the back of a spatula or the bottom of a clean glass. Make sure it is tightly packed to help the bars hold together once baked.

Once chilled and firm, use the parchment overhang to lift the slice out of the tin and place it on a cutting board.
Cut the slice into 12 bars or squares, depending on your preference. Store in an airtight container in the fridge for up to 1 week.
