📝 Instructions

12 steps
1

Prepare a baking tin (approximately 20x20 cm) by lining it with parchment paper. Set it aside.

2

In a large, heavy-bottomed saucepan, add the granulated sugar, unsalted butter, and whole milk.

3

Heat the mixture over low heat, stirring frequently, until the sugar has completely dissolved and the butter has melted. Avoid boiling at this stage.

4

Once the sugar has dissolved, add the sweetened condensed milk to the saucepan and stir well to combine.

5

Raise the heat to medium and bring the mixture to a gentle boil. Stir constantly to prevent the mixture from sticking to the bottom or burning.

6

Continue to simmer the mixture, stirring regularly, until it reaches a temperature of 118°C (245°F) on a candy thermometer. If you don't have a thermometer, you know it’s ready when the mixture thickens, darkens slightly, and starts to pull away from the sides of the pan.

7

Remove the saucepan from the heat and stir in the vanilla extract.

8

Let the mixture cool slightly for 2-3 minutes, then beat it vigorously with a wooden spoon until it thickens and becomes creamy. This helps to give the tablet its signature crumbly texture.

9

Pour the mixture into the prepared baking tin and spread it evenly using a spatula or the back of a spoon.

10

Leave the tablet to cool and set completely at room temperature for at least 4 hours or overnight.

11

Once set, remove the tablet from the tin and cut it into small squares or rectangles using a sharp knife.

12

Store the Scottish Tablet in an airtight container at room temperature for up to 2 weeks. Enjoy!
