Preheat your oven to 375°F (190°C).
Peel and slice the carrots into thin, even rounds (about 1/4-inch thick).
Bring a large pot of salted water to a boil. Add the sliced carrots and cook for 5-7 minutes, until just tender. Drain and set aside.
