Preheat your grill to medium heat (approximately 375°F). If using an oven, preheat to 375°F.
Prepare the pork sirloin by patting it dry with paper towels. Slice a deep pocket into the side of the pork sirloin without cutting all the way through. Season the outside and inside of the pocket with 1 tsp salt and 0.5 tsp ground black pepper.
