πŸ“ Instructions

8 steps
1

Bring a large pot of salted water to a boil. Cook penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, drain the pasta, and set aside.

2

While the pasta cooks, season the sirloin steak evenly on both sides with 1/2 tsp of salt and 1/4 tsp of black pepper.

3

Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the steak and sear for 3-4 minutes on each side for medium-rare, or until cooked to your desired level. Remove from skillet, let rest for 5 minutes, then slice into bite-sized strips.

4

In the same skillet, lower the heat to medium and add the remaining 1 tbsp of olive oil and 2 tbsp of butter. Once melted, add the minced garlic and sautΓ© for 1-2 minutes until fragrant.

5

Pour in the heavy cream and stir well. Bring to a gentle simmer, then add the grated Parmesan cheese, stirring constantly until melted and the sauce is smooth. Season with the remaining 1/2 tsp of salt, 1/4 tsp of black pepper, and red pepper flakes if using.

6

Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, gradually stir in a little pasta water until the desired consistency is reached.

7

Add the sliced steak back into the skillet, gently tossing to combine and warm the steak through. Remove from heat.

8

Garnish with chopped parsley and serve hot. Optionally, sprinkle extra Parmesan on top for added flavor.
