Bring a large pot of salted water to a boil. Cook penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, drain the pasta, and set aside.
While the pasta cooks, season the sirloin steak evenly on both sides with 1/2 tsp of salt and 1/4 tsp of black pepper.
Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the steak and sear for 3-4 minutes on each side for medium-rare, or until cooked to your desired level. Remove from skillet, let rest for 5 minutes, then slice into bite-sized strips.
