Place the chicken breasts on a cutting board and pound them lightly with a meat mallet (or the back of a skillet) to ensure even thickness.
Season both sides of the chicken with salt, black pepper, paprika, cumin, and oregano. Set aside.
In a large skillet, heat 2 tablespoons of olive oil over medium heat.
Once hot, add the chicken breasts and sear for 4-5 minutes per side or until golden brown. Remove the chicken from the skillet and set aside on a plate.
In the same skillet, reduce the heat to medium and add 1 tablespoon of butter. Allow it to melt, then add the chopped onion.
Sauté the onion for 3-4 minutes until it becomes translucent, then add the minced garlic and sauté for another 1-2 minutes until fragrant.
Pour in the chicken broth and lemon juice, scraping the bottom of the skillet with a wooden spoon to release any browned bits (this is where the flavor is!).
Return the chicken breasts to the skillet, reduce the heat to low, and cover with a lid. Let simmer for 10-15 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
Remove the lid and allow the sauce to thicken slightly for 2-3 minutes, spooning some sauce over the chicken occasionally.
Remove from heat and garnish with chopped parsley, if desired. Serve warm with your choice of sides, such as rice, mashed potatoes, or a green salad.
