Preheat your oven to 375°F (190°C).
Lightly grease a 9x13-inch baking dish with olive oil or non-stick cooking spray.
In a large bowl, crack the eggs and whisk them until smooth and fully blended.
Add the whole milk, salt, and black pepper into the whisked eggs and mix until well combined. Set aside.
Heat olive oil in a skillet over medium heat. Dice the red bell pepper and yellow onion, slice the mushrooms, and add them to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
Add the spinach to the skillet and cook for another 2 minutes until wilted. Remove from heat.
Halve the cherry tomatoes and chop the parsley.
Spread the sautéed vegetable mixture evenly across the bottom of the greased baking dish.
Sprinkle half of the cheddar cheese over the vegetables, then pour the egg mixture evenly on top.
Evenly distribute the halved cherry tomatoes on top of the egg mixture, then sprinkle the remaining cheese and chopped parsley.
Place the dish in the preheated oven and bake for 30-35 minutes, or until the egg is fully set and the top is golden brown.
Remove from the oven and allow to cool slightly before slicing and serving.
