📝 Instructions

13 steps
1

Rinse and sort the dried navy beans, then place them in a large bowl. Cover with water and soak overnight, or for at least 8 hours.

2

Drain and rinse the soaked beans. Set them aside.

3

Preheat your oven to 325°F (160°C).

4

In a large oven-safe pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

5

Add the diced onion to the pot and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for 1 more minute, until fragrant.

6

Stir in the tomato paste and cook for 2 minutes to deepen its flavor.

7

Add the canned diced tomatoes, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, ground cumin, salt, and pepper. Mix well to combine.

8

Add the rinsed navy beans and water to the pot, stirring to combine everything.

9

Bring the mixture to a simmer over medium heat, then cover the pot with a lid and transfer it to the preheated oven.

10

Bake for 2 to 2.5 hours, or until the beans are tender and the sauce has thickened. Stir occasionally and add more water if needed to prevent drying out.

11

Once the beans are cooked, stir in the reserved crispy bacon.

12

Taste and adjust seasoning, adding more salt or pepper if necessary.

13

Serve warm as a side dish or a main course, and enjoy!
