Preheat your oven to 400°F (200°C).
Peel the onions and slice off the tops and bottoms to create flat surfaces. Carefully hollow out the centers using a spoon, leaving about 2-3 layers of onion as the shell. Save some of the removed onion layers for the filling and finely chop them.
