Peel the potatoes and cut them into evenly sized sticks about 1/4 inch thick.
In a large pot, combine 120 ml of white vinegar and 1 liter of water. Add 1 tsp of salt and bring the mixture to a boil.
Reduce the heat to a simmer and add the potato sticks. Simmer for 8-10 minutes until the potatoes are just tender but not breaking apart.
Drain the potatoes and pat them dry with paper towels. Let them air dry for 15 minutes.
In a large, deep pot or a fryer, heat the neutral oil to 180°C (350°F). Work in batches to avoid overcrowding, frying the potatoes for 4-5 minutes until they are lightly golden. Remove and place on a paper towel-lined tray to drain.
