📝 Instructions

7 steps
1

Remove the stems from the dried árbol chiles. Shake them gently to remove any excess seeds, but do not worry if a few seeds remain.

2

Heat a skillet over medium heat and add the vegetable oil. Once the oil is hot, add the dried árbol chiles and toast them for 1-2 minutes, stirring constantly to prevent burning. The chiles should become fragrant and slightly darkened but not black. Remove them from the skillet and set aside.

3

In the same skillet, add the Roma tomatoes, garlic cloves (still in their skins), and the quartered white onion. Cook these for about 5 minutes, turning occasionally, until the tomato skins are charred and soft, and the garlic and onion have developed a slight caramelization.

4

Peel the garlic cloves and transfer them, along with the charred tomatoes, onion, toasted chiles, and salt, to a blender or food processor.

5

Add 1 cup of water to the blender and blend the ingredients on high until the salsa is smooth. Taste and adjust the salt if needed.

6

If the salsa is too thick, add a little more water, 1 tablespoon at a time, until you reach your desired consistency.

7

Serve the salsa immediately as a dip or as a topping for your favorite dishes. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
