Pat the salmon fillets dry with a paper towel. Season both sides with salt and freshly ground black pepper.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot and shimmering, place the salmon fillets skin-side down into the skillet. Cook for 4-5 minutes until the skin is crispy and the fillet releases easily from the pan.
