Peel and cut the russet potatoes into evenly sized chunks, about 1.5 inches each. Rinse the cut potatoes under cold water to remove excess starch.
Place the potatoes in a large pot and add enough water to cover them by about 1 inch. Add 1 teaspoon of kosher salt and bring the water to a boil over medium-high heat.
While the potatoes are cooking, finely chop the fresh rosemary and set aside.
