📝 Instructions

9 steps
1

In a large saucepan, combine the strawberries, raspberries, red currants, sugar, and 500 milliliters of water.

2

Place the saucepan over medium heat and bring the mixture to a simmer. Stir occasionally to allow the sugar to dissolve and the berries to release their juices. Simmer for about 10 minutes, or until the fruit is soft.

3

Remove the saucepan from the heat and strain the mixture through a fine-mesh sieve into a clean bowl or saucepan. Use the back of a spoon to press the berries and extract as much juice as possible. Discard the pulp.

4

Return the strained berry juice to the saucepan and bring it to a gentle simmer over low heat.

5

In a small bowl, mix the potato starch with 4 tablespoons of cold water to create a slurry.

6

Slowly pour the potato starch slurry into the simmering berry juice while constantly whisking. Continue to whisk until the mixture thickens to a pudding-like consistency, about 1–2 minutes. Remove from heat.

7

Pour the thickened berry pudding into serving bowls or a large serving dish. Allow it to cool to room temperature, then refrigerate for at least 1 hour to set.

8

Just before serving, lightly whip the heavy cream until it reaches soft peaks.

9

Serve the Rødgrød med Fløde chilled with a dollop of fresh whipped cream on top.
