Preheat your oven to 400°F (200°C).
Pat the halibut fillets dry with a paper towel and season both sides evenly with 1 teaspoon salt and 0.5 teaspoon black pepper.
Heat 1 tablespoon of olive oil in a large ovenproof skillet over medium-high heat. Once hot, sear the halibut fillets skin-side up (if skin-on) for about 2 minutes, or until golden brown.
Flip the fillets over and cook for another 2 minutes. Then, transfer the skillet to the preheated oven and roast for 8–10 minutes depending on the thickness of the fillets, or until the fish is opaque and flakes easily with a fork.
While the halibut is in the oven, make the tomato cream sauce. Heat the remaining 1 tablespoon olive oil in a medium saucepan over medium heat.
