Easy to prepare yet undeniably gourmet, this flavor-packed spread is a must-try for garlic lovers.
Preheat your oven to 200°C (400°F).
Slice the tops off the garlic bulbs to expose the cloves, leaving the bulbs intact.
Place the garlic bulbs on a piece of aluminum foil. Drizzle olive oil over the exposed cloves, then wrap the bulbs tightly in the foil.
Roast the garlic in the oven for 30-35 minutes, or until the cloves are soft and golden brown. Remove from the oven and let cool.
Once cool enough to handle, squeeze the roasted garlic cloves out of their skins into a mixing bowl.
Add the softened butter and cream cheese to the roasted garlic. Mash together with a fork or use a hand mixer until smooth and creamy.
Stir in the fresh thyme leaves, salt, black pepper, and lemon juice. Adjust seasoning to taste.
Transfer the pâté to a serving dish. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
Serve chilled or at room temperature with crackers, toasted bread, or vegetable sticks.
