Preheat your oven to 400°F (200°C).
Remove the leaves and stem of the cauliflower, then cut the head into bite-sized florets.
Peel the pearl onions and set aside.
Slice the top off the garlic bulb, exposing the tops of the cloves. Drizzle with 1 teaspoon of olive oil and wrap it in aluminum foil.
